
Strawberry, Cauliflower, & Kale Salad
The sun is shining in England and strawberry season has arrived šThis is a simple and nutritious salad to help us ease into the warmer weather. Grab a bottle of wine, some sunglasses, this crunchy salad, and get out into the garden. This serves 2 generously as a main or 4-6 as a side or appetiser, and can also be easily made vegan with one simple swap.
Ingredients
For the salad
- 125 grams kale, finely chopped and any thick stocks removed
- 1 small cauliflower, cut into floret and finely chopped
- 150 grams strawberries, sliced or quartered
- 75 grams feta, crumbled (or vegan alternative)
- 40 grams almond slivers
For the dressing (double if you like heavy dressing)
- 60 ml extra virgin olive oil
- 1 tbsp balsamic vinegar
- 2 tsp Dijon mustard
- 2 tsp maple syrup
- 1/4 tsp salt (or more to taste)
Instructions
- Simply whisk together your dressing ingredients and combine with the kale, cauliflower, and strawberries before adding crumbled feta and almond slivers on top. Enjoy in the sunshine!
