
Waste Less Cauliflower Salad
Cauliflower is one of my favourite vegetables but I always feel guilty when I use the florets and leave the leaves and stalks behind for the food waste bin. This simple salad is a great way to reduce waste, and is delicious too. This dish works as a simple salad for lunch or an ideal warm weather side for grilled chicken. This serves up to six as a side, or two people generously as a main.
Ingredients
- 1 cup Israeli couscous, cooked to pack instructions
- 1 cauliflower, leaves and stalks separated and thinly sliced (outer layer of thick stalks can be peeled before cutting if they’re tough)
- 100 g feta (or vegan alternative)
- 12.5 g parsley, chopped
- 1 lemon, juiced
- 1/4 cup extra virgin olive oil
- salt to taste
- pepper to taste
Instructions
- Simply mix all of the ingredients together in a large bowl and enjoy!
