Aztec Cake

Sorry, there’s no sugar here! I’ve been eating variations of this my whole life and it’s a major comfort food for me. Think Mexican lasagna – layers of tortillas, shredded chicken, creamy sauce, tomatoes and peppers – what’s not to like? This version is made with ingredients they are easy to find in England and goes great with some extra salsa and avocado.

Ingredients
  

  • 800 grams cooked chicken, shredded
  • 2 green bell peppers, skin peeled and cut into strips  (can sub for similar roasted green peppers from a jar)
  • 1 tbsp vegetable oil
  • 4 large cloves of garlic, minced
  • 1 brown onion, diced
  • 1 tbsp chipotle paste
  • 4 tomatoes, diced (preferably Roma or San Marzano)
  • 12.5 g coriander, chopped
  • 1/2 tsp salt (or more to taste)
  • 1 tsp fresh black pepper (or more to taste)
  • 20 corn tortillas
  • 2 cups full fat crème fraiche
  • 1 lime, juiced
  • 250 g buffalo mozzarella
  • 2 ears of corn, grilled or roasted and kernels removed

Instructions
 

  • Preheat oven to 160c/140 fan.
  • Heat the oil in a frying pan over modern-high heat. Once hot, add the onion and garlic and fry for one minute, before stirring in the chipotle paste and tomatoes. Fry mixture for 7-8 minutes more until onion have softened.
  • Add the shredded chicken, 3/4 of the chopped coriander, salt and pepper to taste, and stir mixture to combine. Set aside.4. Mix the creme fraiche with the juice of one lime.
  • Coat the bottom of a large baking dish with the creme fraiche mixture before lining the bottom of the dish with a layer of tortillas. I like to cut some of my tortillas in half to line the sides more easily. Add another layer of the creme fraiche mixture, followed by a layer of the chicken and tomato mixture, and finally sprinkle the mozzarella on top. Repeat the layers until you have four, with the top layer omitting the chicken mixture. Top the final layer with extra mozzarella and the roasted pepper slices.
  • Bake in the oven for 25-30 minutes, and until the mozzarella begins to turn golden.
  • Cut into portions, and serve topped with the roasted corn, remaining chopped coriander, and extra salsa and avocado if liked.
