Blackberry and mascarpone bruschetta

One of the things that I appreciate about bruschetta is that it’s so versatile. I love a typical tomato and basil version, but sometimes you want to be try something different – in comes some blackberries and mascarpone! This bruschetta has sweetness from the honey and a slight bitterness from the balsamic glaze that pair perfectly together. Plus, blackberries are back in season. If you’re looking for something new to add to the table for your next get together, give this recipe a try.

Servings 10 or more servings

Ingredients
  

  • 1 loaf ciabatta, sliced on the diagonal
  • 60 ml olive oil for brushing
  • 250 grams mascarpone
  • 2 tsp honey
  • Juice and zest from one lemon
  • 150 grams blackberries, sliced in half
  • Balsamic glaze for drizzling
  • Mint for garnish, thinly sliced lengthways

Instructions
 

  • Turn grill to high. Place ciabatta slices on a baking tray and brush each side with olive oil before grilling each size until golden. Remove tray and set aside.
  • Mix mascarpone, honey, and lemon juice together in a small bowl.
  • Spread approx. 1 tbsp of mascarpone on each piece of bread before placing the 2-3 pieces of blackberry on each piece.
  • Garnish each piece with the sliced mint, lemon zest, and a drizzle of balsamic glaze.
