
Slow Cooker Beef Barbacoa
The slow cooker is one of my favourite kitchen tools. You can get the best selection of slow cooked meats with minimal effort like this interpretation of beef barbacoa. You can use this barbacoa in burritos, tacos, rice bowls, salads, or even as part of an omelette or as a pizza topping. Don’t be afraid to get creative.
Ingredients
- 2 tbsp vegetable oil
- 1.5 kg braising beef, cut into large cubes and seasoned
- 1 onion, sliced
- 2 tbsp chipotle adobo paste
- 4 cloves of garlic, minced
- 1 tbsp cumin
- 1 tbsp Mexican oregano (can sub Mediterranean if needed)
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp ground cloves
- 2 bay leaves
- 500 ml beef stock
- 2 limes, freshly juiced
Instructions
- Heat the vegetable oil in a large skillet over medium high heat and sear the beef on all sides.
- Stir all of remaining ingredients to the skillet and bring to a boil.
- Transfer the mixture to your slow cooker and cook on low for 8-9 hours, or high for 5-6 hours.
- Once cooked, use two forks to shred the beef and let soak in the juices. You can serve this directly from the slow cooker, or remove to another dish.
