
Zesty spiced cauliflower
Cauliflower is one of my favourite vegetables. It’s super versatile, and a great base for just about any flavouring. I use this cauliflower as a side in rice bowls, in salads, or even as a vegetarian or vegan taco or burrito filling.
Ingredients
- 1 head of cauliflower, cut into florets (approximately 550g)
- 2 tbsp olive oil
- 1/2 tsp ground coriander
- 1/2 tsp Mexican oregano (can be subbed for Mediterranean)
- 1/2 tsp garlic powder
- 1/2 tsp tsp ground cumin
- 1/4 tsp chilli powder
- 1 lime, juice and zest reserved
- salt to taste
- pepper to taste
Instructions
- Preheat oven to 200c/180 fan.
- Mix all ingredients except the lime zest together in a large bowl until the cauliflower is evenly coated.
- Spread out the cauliflower on a lined baking sheet.
- Cook the cauliflower for 20-25 minutes until slightly golden and crisp.
- Add the lime zest on top of the cauliflower before serving.
