Cauliflower baked in spices with lime zest

Zesty spiced cauliflower

Cauliflower is one of my favourite vegetables. It’s super versatile, and a great base for just about any flavouring. I use this cauliflower as a side in rice bowls, in salads, or even as a vegetarian or vegan taco or burrito filling.

Ingredients
  

  • 1 head of cauliflower, cut into florets (approximately 550g)
  • 2 tbsp olive oil
  • 1/2 tsp ground coriander
  • 1/2 tsp Mexican oregano (can be subbed for Mediterranean)
  • 1/2 tsp garlic powder
  • 1/2 tsp tsp ground cumin
  • 1/4 tsp chilli powder
  • 1 lime, juice and zest reserved
  • salt to taste
  • pepper to taste

Instructions
 

  • Preheat oven to 200c/180 fan.
  • Mix all ingredients except the lime zest together in a large bowl until the cauliflower is evenly coated.
  • Spread out the cauliflower on a lined baking sheet.
  • Cook the cauliflower for 20-25 minutes until slightly golden and crisp.
  • Add the lime zest on top of the cauliflower before serving.
