Antipasti Italian Chicken and White Beans

Looking for a quick and tasty dinner? This recipe takes very little effort but you wouldn’t know it by how the dish tastes! You only have to reach for one spice container for this recipe instead of several thanks to Just Spices who has given me some of their spices to try out. The Italian Allrounder seasoning does the heavy lifting in this recipe and leaves you with a meal packed full of flavour in just 20 minutes.

Ingredients
  

  • 600 grams boneless thighs
  • 2 tbsp oil from the sun dried tomatoes divided
  • 3 tsp Italian Allrounder seasoning from Just Spices
  • 2 400g cans of cannellini beans drained
  • 125 grams artichoke hearts roughly chopped
  • 60 grams sun dried tomatoes roughly chopped
  • 250 ml stock
  • 75 ml double cream
  • 45 grams parmesan shredded, plus more for serving
  • Juice of 1/2 lemon
  • Pepper

Instructions
 

  • Place chicken thighs in a small bowl with 1 tbsp of the oil from the sun dried tomatoes and 2 tsp of seasoning. Mix to coat.
  • Cook the chicken over medium-high heat for 3-4 mins per side to give the chicken good colour. Remove the chicken and set aside on a plate.
  • Add the extra 1 tbsp of oil to the pan and adjust the heat to low. Add the artichoke hearts, sun dried tometoes, and the final 1 tsp of seasoning. Stir gently for 2 mins.
  • Add the stock and cannellini beans. Stir the mixture and nestle in the chicken. Cook for 5 more mins until chicken is cooked through.
  • Gently stir in the cream, a couple grinds of fresh black pepper and the fresh lemon juice. Stir until mixture is hot and has thickened before serving with extra parmesan and black pepper.
